almost a day off
Nov. 23rd, 2014 09:33 pmI only worked 11a-2p, so most of the day was free. It was nice. I got to hie off to the coffee shop for two hours, and that alone/down time really made a difference. Mike is putting up new window blinds in the front bay window -- the kids had destroyed the mini-blinds -- and I made a banana triple-berry swirled coffee cake. It's cooking right now and smells amazing. The original recipe doesn't call for jam.
Jam Swirled Banana Streusel Cake
For the Cake:
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
3 bananas
2 cup all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp kosher salt
1/2 cup chopped walnuts
1/4 cup skim milk
1/2 to 1 cup of jam
For the Streusel:
1/4 cup flour
1/4 cup granulated sugar
1/4 cup brown sugar
1 tsp cinnamon
2 Tbsp unsalted butter, softened
1/4 cup walnuts, chopped
For the cake, beat butter with sugar for 3 minutes. Add eggs and vanilla, beat until combined. Add bananas and beat until mashed (I toss mine in whole, but you can mash them first if you prefer). Add flour, baking soda, baking powder and salt until combined. Beat in nuts and skim milk.
Pour batter into two 9inch round cake pans that have been greased generously. (Because we have so many people here, I just put it in a 9X13) -- for the jam filling, I poured about 2/3 of the batter in the pan, dotted generously with jam, spooned the remaining batter over the jam and then swirled it with a knife. Then I sprinkled the top with a double-batch of the streusel topping.
In a small bowl, mix streusel topping ingredients together. I use my hands to break up the butter and mix it with the other ingredients. Mix until it forms crumbs. Divide topping evenly between the two cakes, sprinkling on the top. Bake in a 350 degree oven for 25 minutes. Remove and cool on a wire rack for 10 minutes.
Edit: it came out really yummy! I'm not completely sold on the banana and jam combo -- it's a little sweet for me. I was just thinking that a nutella filling with the banana coffee cake would be amazing. Well, that would be sweet too, but I love a banana/chocolate mix.
